San Sebastián: Washed Coffee from Oaxaca, Mexico
San Sebastián comes from small family-owned farms surrounding San Sebastián Coatlán in Oaxaca’s historic Zona Pluma. Set within the Sierra Madre del Sur, producers cultivate coffee alongside bananas, corn, beans, and fruit trees. Bourbon, Caturra, and the region’s distinctive Typica Pluma varieties combine with careful farm management and traditional processing to create a sweet, balanced expression of Oaxacan coffee.
About San Sebastián
Grown between 900 and 1,300 metres above sea level, these small farms are scattered throughout the lush mountains surrounding San Sebastián Coatlán. The Zona Pluma landscape rises from Oaxaca’s Pacific coast into forested mountains, where coffee has been cultivated by farming families for generations. Clay-rich soils, diverse shade crops, and the region’s distinctive growing conditions contribute to the character of this coffee.
The lot is sourced through Terra Coffeas Mexico and export partner Galguera Gomez. Their collaborative approach provides producers with post-harvest support, cupping expertise, quality control, traceability, and access to transparent pricing while allowing individual farmers to maintain responsibility for their farms and processing.
Careful Harvesting & Washed Processing
During harvest, producers selectively pick cherries at optimal ripeness before hand sorting and floating them to remove damaged or underdeveloped fruit. The cherries are then depulped and undergo a two-stage fermentation: 24 hours of dry fermentation followed by another 24 hours submerged in water.
After fermentation, the parchment is fully washed and slowly dried on patios or raised beds to approximately 11% moisture. The dried coffee is then transported to Galguera Gomez for cupping, final selection, and export preparation, helping maintain quality and traceability throughout the process.

Processing & delivery times
We roast in small batches and pack fresh. Most orders ship within 1–3 business days (excluding weekends and holidays).
Once shipped, delivery time depends on your region and carrier capacity. You’ll receive tracking as soon as your order leaves our roastery.

Returns & refunds
Coffee (whole bean + ground)
Coffee is a perishable product, so coffee purchases are final sale once shipped.
If something is wrong with your order (damaged parcel, incorrect item, or a quality issue), contact info@transcendcoffee.com within 7 days of delivery with your order number and details. Photos help if the parcel was damaged. We’ll make it right.
Ground coffee (custom ground)
We grind coffee specifically to the brew method you select, so ground coffee can’t be returned or exchanged once shipped.
Not sure what to choose? We recommend ordering whole bean for maximum freshness and flexibility.
If we grind your order incorrectly, contact us — we’ll fix it.
Equipment & merchandise
Unopened, unused equipment and merchandise may be eligible for return. Email info@transcendcoffee.com within 15 days of delivery to request authorization.
