Sin Limites Coffee: A Legacy Without Limits
Nestled in the mountains outside San José, Costa Rica, the 2.5-acre Sin Limites coffee farm and mill redefines excellence in coffee production. Translating to “without limits” in English, Sin Limites is owned and operated by Jaime Cardenas, whose passion and innovation have set a new standard for Costa Rican coffee. Partnering with his wife, Maribel, and her renowned Barrantes family, Jaime has transformed his journey into a story of dedication, community, and exceptional coffee.
The Journey of Sin Limites
Jaime’s path into coffee farming began when he married into the Barrantes family, a name synonymous with world-class coffee. Determined to master the craft, Jaime built his own micro-mill on his wife’s farm, and in their first year of production, Sin Limites earned the prestigious Cup of Excellence award. The winnings were reinvested into infrastructure, plant improvements, and community support, demonstrating the family’s commitment to quality and sustainability.
The Honey Process: Crafting Complexity
Sin Limites employs the unique honeying process, a method that enhances the coffee’s natural sweetness and complexity:
-
Selective Skin Removal: Only the skin of the coffee cherry is removed, leaving some fruit flesh on the seed.
-
Natural Sugar Transfer: The remaining fruit imparts its sugars to the seed during the drying stage.
-
Flavour Development: This meticulous process results in a coffee that’s both vibrant and richly nuanced.
Overcoming Challenges, Transcending Limits
Despite the challenges of coffee farming, Jaime and his family’s unwavering dedication and innovative practices have allowed them to produce truly exceptional coffee. Their story is a testament to passion, resilience, and the pursuit of excellence.
