Candy Blast comes from the highlands of Chelchele in the Gedeb district of Ethiopia’s Gedeo Zone, an area celebrated for producing some of the country’s most expressive coffees. This microlot, processed by EDN Ethiopian Coffee, undergoes a meticulous “supernatural” fermentation that transforms the fruit’s natural sweetness into an intensely aromatic, candy-like experience.
About Candy Blast
Sourced from smallholder farmers in Chelchele, Gedeb, this lot is grown at elevations ranging from 1,950–2,200 metres above sea level. The region’s fertile soils and cool climate create ideal conditions for slow cherry maturation, enhancing sweetness and complexity in the cup. Gedeb’s proximity to Guji and its distinctive terroir produce some of Ethiopia’s most vibrant and fruit-forward coffees, distinct from the traditional Yirgacheffe profile.
The Supernatural Process
At the Banko Chelchele station, freshly harvested cherries are sorted by hand, floated to remove less dense fruit, and sealed into carbon-fibre drums for anaerobic fermentation lasting 7–10 days at 15–18°C. This environment encourages the natural sugars to intensify without over-fermenting. After fermentation, the cherries are slowly dried on raised beds, then rested to stabilise moisture before export.
This advanced method, part of EDN Ethiopian Coffee’s innovation program, creates exceptional sweetness and clarity, balancing the vivid fruit character with a clean finish.
