Banko Gotiti: Natural Coffee from Gedeb, Ethiopia
Banko Gotiti is a naturally processed coffee from the Gedeb district of Ethiopia, the southernmost area of the Gedeo zone. While often grouped under the broader Yirgacheffe name, Gedeb stands apart for its high elevations, cool climate, and consistently vibrant, fruit-forward coffees. The region is remote and largely dedicated to coffee production, with smallholder farmers cultivating coffee at some of the highest elevations in the country.
About Banko Gotiti
Located between 1,900 and 2,200 metres above sea level, Banko Gotiti benefits from slow cherry maturation, which contributes to dense beans and expressive flavour development. Small communities farm throughout the surrounding highlands, relying on coffee as a primary livelihood and delivering their harvest to the Gotiti processing station.
Natural Processing at Gotiti Station
Smallholder farmers bring ripe cherries to the Gotiti station, where coffees are carefully sorted on arrival before being dried whole on raised beds. Drying typically takes two to four weeks, depending on weather conditions. During this time, the cherries are regularly turned to ensure even moisture loss and consistent fermentation. Once drying is complete, the coffee is rested, hulled, and transported to Addis Ababa for final sorting and export preparation.
This meticulous approach to natural processing preserves clarity while enhancing fruit intensity and sweetness.
