The average daily temperature of the areas surrounding Pasto is around 13 degrees Celsius, which causes the coffee trees and their cherries to grow slowly. The steep mountain slopes keep the trees shaded for large portions of the day. Despite this, there are periods during the day wherein the trees are exposed to a large amount of sunlight. As the sky is often cloudless, these intense, short bursts of light offer optimal growth for cherries. Vital minerals are provided by periodic ash deposits from the nearby Galeras volcano. The Pastusos who farm the region reputedly produce high quality coffee year after year.

We want to draw your attention to a subtle change on our labels, all of our labels now include both filter and espresso symbols. The reason for this is simple: all of our coffees have been prepared so that they are well suited to any brewing method. Different brewing methods will highlight different aspects of our coffees, making each brew unique. We will continue to classify any coffees we deem especially suited for brewing espresso.
