Transcend Coffee & Roastery | Green
We’ve reached out to the good folks at Red Fox Coffee Merchants for this lot, which comes from the Eastern Mexican state of Veracruz. We have never purchased coffee from this region before, and made the decision to look to different countries when looking for spot offerings to fill our menu. This lets us learn about new places and share what we learn with you!
José Cienfuegos has a small farm near the town Huatusco, which is just north of the city of Córdoba. He cultivates Bourbon and a variety called Garnica, which is a hybrid of Caturra and Mundo Novo, which themselves are dwarf mutations of Bourbon. Garnica was developed by the Mexican Institute of Coffee in 1960 and is really only found in Veracruz these days. It has a nice cup profile that is similar to Caturra and Catuai. José’s farm is located at 1350 meters, which is quite a bit lower than many other coffees we purchase, but due to its high latitude, the weather is very cool and the effects on the ripening of the fruit are nearly identical. This coffee does not taste like it was grown at a lower elevation! Like many farmers in the area, José does not have his own wet mill, so he processes his cherries at his neighbour, Ernesto Pérez’s mill. His coffee is de-pulped, fermented overnight in a cement tank, then mechanically dried. We really hope you like this unique coffee!
