This incredible coffee comes from roughly 300 contributing smallholders around METAD’s Hambela estate. These outgrowers (as they’re called by METAD) bring their freshly harvested cherries to Hambela estate’s Alaka processing station, where they receive immediate payment. The cherries are sorted, floated and rinsed before being moved on to the long raised beds of the Alaka station for careful drying. The drying beds are attended carefully by the workers at the station, and the coffee is covered at night to prevent re-moistening.
Selected and improved varieties of coffee are used more widely in Ethiopia than is commonly known. These often come from the Jimma Agricultural Research center, and METAD provides seedlings to their estates’ outgrowers at no cost. These varieties are resistant to coffee berry disease and coffee leaf rust, and produce consistently delicious coffee.
