Guillermo’s sidra is the first of the variety we’ve ever bought. While we’ve had the opportunity to taste it from various producers in Ecuador and Colombia, we’ve never had the chance to purchase any for sale to our customers. Thankfully we managed to get samples from Red Fox Coffee Merchants of some stellar Ecuadorian offerings that we can now share with you!

This will be the first of two lots from Guillermo Lomas, whose farm is in the community of La Perla in Pichincha, Ecuador. He mainly grows Typica (watch for it next month), but has also started growing Sidra. Sidra was developed on a Nestle-funded experimental farm in Ecuador. With the express purpose of creating a hybrid with high quality and unique characteristics, Red Bourbon and Typica (the two-parent varieties of most commercially cultivated coffee in the world) were manually crossed. Over time, the result was a plant that produced coffee that had light, delicate floral qualities paired with deep sweetness and a unique acid profile. The name sidra (Spanish for cider) comes from the fact that the coffee had a softer, unique acidity, more like apples and pears than anything else. In exchange for feedback on the variety, Nestle offered the seeds to farmers in Ecuador for free, which allowed buyers the opportunity to taste. Now it is being planted in Ecuador’s neighbour, Colombia, with some excellent results as well.
