Johnny Alvarado used to run the Imperio Rojo micro-mill with his two brothers, Jose and Joiner, but built his own mill in 2016, which was a good idea because his farms are growing so fast that he needs the capacity! His son Jhonny, Jr. has taken over the milling of coffee, and he processes the coffee up at 1800 meters on their El Salitre farm where it’s cooler and there’s less chance of the cherries spoiling. He brings the processed coffee straight down the mountain to be dried at a warmer temperature on raised beds in his front yard, and they store their milled parchment in their house. As their operation grows, they’re planning on building a new bodega and maybe even a dry mill in the next couple of years.
This coffee comes from their El Salitre farm and is processed as a white honey, which is the same as we’ve done for the past 3 years. We love the smooth, sweet flavours that both of the Jhonny’s are getting out of their coffee year after year, and we hope you like this year’s coffee too!
