Yirgacheffe is a bodacious coffee that is truly avant-garde in its fermentation process. The unique anaerobic drying process of this coffee accentuates the inherent flavour characteristics of the beans. The fresh cherry is first vacuum-sealed in plastic bags for 120 hours in an oxygen-deprived environment. It is then increasingly pressurized by the carbon dioxide emitted from the fermentation of the fresh fruit. At an elevation of 1893 masl, this lot is distinct in its sultry sweet strawberry dominant profile while simultaneously exhibiting a creamy structure. The process of this coffee is natural and then raised on beds.
