Transcend Coffee & Roastery
This is one of two lots of Mexican coffee that we purchased from Red Fox Coffee Merchants, who have focussed on sourcing coffees from lesser-known areas in Central and South America. This lot comes from the state of Oaxaca, specifically a community called San Mateo Eloxochitlán. Like many communities in northern Oaxaca, it is tough to reach as there are not many roads. Red Fox believes the effort is worth it because the coffees are so unique. Unlike other parts of Mexico that have planted newer and improved varieties of coffee, Oaxaca still has lots of the old Bourbon and Typica lineages planted into the mountainsides. These older plants produce such unique profiles that are increasingly hard to find as farmers replace them with better-yielding and more disease-resistant types.
30 farmers contributed to this lot, which was processed at the community wet mill, undergoing a 24-hour fermentation underwater after depulping before being dried on a covered patio for 10 days. The vibrancy of this coffee really shines through thanks to the combination of these varieties and the skill to know how to bring the best out of them!
