The average daily temperature of the areas surrounding Pasto is around 13 degrees Celsius, which causes the coffee trees and their cherries to grow slowly. The steep mountain slopes keep the trees shaded for large portions of the day. Despite this, there are periods during the day wherein the trees are exposed to a large amount of sunlight. As the sky is often cloudless, these intense, short bursts of light offer optimal growth for cherries. Vital minerals are provided by periodic ash deposits from the nearby Galeras volcano. The Pastusos who farm the region are known for producing high quality coffee year after year.
