We met Luis Alberto Monge at the cupping table in Exclusive Coffe's lab. It's pretty rare to see a coffee farmer cupping coffee, but he travels into San José every week during harvest to deliver samples and cup his coffees. The first coffee of his that we tasted was his petite beans, which we've now bought every year since 2012. Every year, we go back and taste more and more of his coffees with him and his commitment to continuous improvement has never wavered. He's begun introducing new varieties to his farms, he's now experimenting with new processing methods, and his mill continues to be impeccably well cared for. Luis and his brother Oscar run the mill, which they named after their mother, who lives nearby.

About the petite beans:

After coffee cherries are processed and dried, the seeds still need to be dry-milled before they're ready to be exported. Dry-milling is the process of removing the protective parchment, as well as sorting the seeds by density and by size. The petite beans we buy from Luis Alberto and Oscar are classified as below Size 14 (below 14/64 inches in diameter). As each lot is milled, the small beans that are leftover are sorted separately before being blended with other small beans for other lots. Luis and Oscar operate several farms and cultivate many varieties, which means that any number of varieties end up in this petite bean blend, so the flavours are always complex and exciting.

We want to draw your attention to a subtle change on our labels, all of our labels now include both filter and espresso symbols.  The reason for this is simple:  all of our coffees have been prepared so that they are well suited to any brewing method.  Different brewing methods will highlight different aspects of our coffees, making each brew unique.  We will continue to classify any coffees we deem especially suited for brewing espresso.
